Winemaking:

The grapes are hand-harvested in 18–20 kg boxes, followed by careful bunch selection, destemming, and berry sorting. The must undergoes cold maceration for 5 to 7 days at temperatures between 8 and 10°C (46–50°F). Fermentation takes place in small stainless steel tanks, using extraction techniques such as punch-downs and délestage. After maceration, the wine is transferred to oak barrels where malolactic fermentation occurs, followed by 12 months of aging. Prior to release, the wine is gently filtered and aged in bottle at the winery for at least six months.
